Who here would actually enjoy eating vegetable beef soup

Ingredients:
– 1 lb beef stew meat, cubed
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 4 cups beef broth
– 2 cups water
– 1 can (14.5 oz) diced tomatoes
– 2 cups mixed vegetables (carrots, potatoes, green beans, corn)
– 1 teaspoon dried thyme
– Salt and pepper to taste

Instructions:
1. Brown the Beef:
– Heat olive oil in a large pot. Add beef and brown on all sides. Remove and set aside.

2. Cook the Aromatics:
– In the same pot, add onion and garlic. Sauté until softened.

3. Simmer the Soup:
– Return beef to the pot. Add beef broth, water, tomatoes, and thyme. Bring to a boil, then reduce to a simmer for 45 minutes.
