Ingredients
For the Filling:
4 cups sliced peaches (drained and either fresh or canned)
If using fresh peaches, add 1/2 cup water to 1 cup of granulated sugar
For the Batter:
1 cup granulated sugar
1 cup all-purpose flour
1 tablespoon baking powder
1 cup milk
1/4 tsp salt
1 stick of melted unsalted butter (1/2 cup)
1 teaspoon of vanilla essence (optional)
Ground cinnamon (optional, for sprinkling on top)
Instructions
Preheat the Oven: Turn the oven’s temperature up to 350°F (175°C).
Prepare the Peaches:
Place the sliced peaches, 1/2 cup water, and 1 cup sugar in a skillet (if using canned peaches, eliminate the water).
After bringing to a boil, simmer for ten minutes or so.
Take off the heat.
Prepare the Batter:
While the peaches are boiling, make the batter.
Mix the flour, baking powder, salt, and 1 cup sugar in a mixing dish. Blend well.
Carefully stir in the milk to prevent lumps, then stir in the melted butter and vanilla extract, if using. Blend until well combined.
