Ingredients
1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
2 carrots, chopped
2 stalks celery, chopped
1 sweet potato, peeled and chopped
1 can diced tomatoes
4 cups vegetable broth
1 can chickpeas, drained and rinsed
1 cup green beans, trimmed and chopped
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions

Sauté the Aromatics
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté for 2-3 minutes, until softened and fragrant.
Add Root Vegetables
Stir in the chopped carrots, celery, and sweet potato. Sauté for about 5 minutes, until the vegetables begin to soften.
Add the Liquids and Beans
Pour in the diced tomatoes (with their juice) and vegetable broth.
Add the drained chickpeas and chopped green beans.
Stir in the dried oregano and thyme, ensuring all ingredients are well mixed.
Simmer the Stew
