Add butter to a large bowl and mix for 2-3 minutes until light and airy.
Place strawberries in a medium sized bowl and mash until almost pureed (this can also be done in a food processor with a quick pulse).
Add strawberries and powdered sugar to the butter and mix until well combined, about 1 minute.
Transfer strawberry butter to an airtight container and store in the fridge. Allow butter to set for 1 day for best flavor.
Serve on toast, English muffins, pancakes, etc. Butter will keep for 4-6 days in fridge (this will depend on the ripeness of the berries used).
