HOW TO MAKE A MASCARPONE CREAM WITH PASTEURIZED YOLK
To make the strawberry tiramisu, start pasteurizing the egg yolks for the mascarpone cream.
In a saucepan, pour the sugar and add the water.
Melt the sugar over medium heat, stirring often.
Be careful not to caramelize it, you need to get a sugar syrup.
Put the egg yolks in a bowl and start whipping them with an electric whisk, adding the hot sugar syrup to the level.
When the egg yolks are soft and frothy, add the mascarpone little by little and continue to whisk the egg and mascarpone cream with an electric whisk until soft.
HOW TO MAKE THE STRAWBERRY AND WHITE CHOCOLATE TIRAMISU RECIPE
Prepare the syrup for the ladyfingers, put the sugar in a bowl and add the water.
Wash the strawberries and remove the stalk.
Cut them into small pieces and put them in a bowl.
Add the lemon juice and a spoonful of sugar to the strawberries.
Stir and set aside.
Dip the ladyfingers in the syrup and make the first layer in a dish or container.
Pour the mascarpone cream over the soaked biscuits, add the strawberry salad and the white chocolate pieces.
Cover everything with another layer of soaked ladyfingers.
