1 cup coconut oil (melted)
3 eggs
1 1/4 cups granulated white sugar
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon salt
2 cups grated zucchini (wet – do not dry it out first)
TOPPING
1/2 cup granulated white sugar
1 teaspoon cinnamon
1/4 teaspoon cream of tartar
PREPARATION
Preheat oven to 350F. Coat two loaf pans with cooking spray and set aside.
In a large bowl, beat oil, eggs, sugar, and vanilla until well combined.
