Skinny Meatloaf

Shape the Meatloaf:
Transfer the meat mixture to a loaf pan (approximately 9×5 inches) and shape it into a loaf. Alternatively, you can shape the loaf freeform on a baking sheet lined with parchment paper.
Prepare the Topping:
In a small bowl, mix together the 1/4 cup of ketchup and the brown sugar (if using).
Spread this mixture evenly over the top of the meatloaf.
Bake the Meatloaf:
Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
If the topping starts to brown too much, cover the meatloaf with aluminum foil.
Rest and Serve:
Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps the juices redistribute and makes for a juicier meatloaf.
Slice and serve with your favorite side dishes.

Tips:
For an even healthier version, you can use ground turkey instead of lean ground beef.
Add finely chopped vegetables like carrots, zucchini, or mushrooms for extra nutrients and moisture.
Serve with steamed vegetables or a side salad to keep the meal light and nutritious.
