Ingredients:
1 lb (450 g) lean ground beef (90% lean or higher)
1/2 cup whole wheat bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped bell pepper (any color)
2 cloves garlic, minced
1 large egg
1/4 cup skim milk
1/4 cup low-sodium ketchup
1 tbsp Worcestershire sauce
1 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
1/2 tsp salt
1/2 tsp black pepper
Topping:
1/4 cup low-sodium ketchup
1 tbsp brown sugar (optional for a slight sweetness)
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, bread crumbs, onion, bell pepper, and garlic.
In a small bowl, whisk together the egg, skim milk, 1/4 cup of ketchup, Worcestershire sauce, oregano, basil, parsley, salt, and pepper.
Pour the wet mixture into the meat mixture and mix until just combined. Be careful not to overmix, as this can make the meatloaf tough.
