Philly Cheesesteak-Inspired Meatloaf

INSTRUCTIONS
Preheat your oven to 350°F (180°C).
Heat the oil in a large pan over medium heat. Add the onion, bell pepper, and mushrooms, and cook until tender, about 7-10 minutes.
Add the garlic and cook until fragrant, about 1 minute. Remove from heat and let cool slightly.
In a large bowl, combine the ground beef, salt, pepper, Cheese Whiz (if using), Worcestershire sauce, ketchup, eggs, breadcrumbs, and the cooked vegetables.
Divide the meat mixture in half. On a baking sheet, shape the first half into a loaf. Place the provolone slices in the center, then cover with the remaining meat mixture. Seal the edges well and shape into a loaf.
Bake in the preheated oven until cooked through, about 50-60 minutes.
Spread the sliced provolone cheese over the top of the meatloaf and return to the oven. Broil until the cheese is melted and bubbly, about 2-4 minutes.
Remove from the oven, let rest for a few minutes, then slice and serve. Enjoy your Philly Cheesesteak-Inspired Meatloaf!
