Italian Sausage, Peppers, and Onions

In the same skillet, add the sliced peppers, onions, and minced garlic.
Cook, stirring occasionally, until the vegetables are tender and slightly caramelized, about 10 minutes.
Add the dried oregano, dried basil, crushed red pepper flakes (if using), salt, and pepper to the skillet. Stir to combine.
Return the sausages to the skillet, nestling them among the peppers and onions.
Cover the skillet and let everything simmer together for another 5-10 minutes, until the sausages are cooked through.
Remove the lid and let any excess liquid cook off.
Garnish with fresh chopped parsley before serving.
