Step 1: Preheat & Prep
Preheat your oven to 400°F (200°C) . Line a baking sheet with parchment paper or lightly grease it.
Step 2: Roast the Cauliflower
In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
Spread the florets in a single layer on the prepared baking sheet. Roast for 20–25 minutes , flipping halfway through, until the cauliflower is tender and slightly caramelized around the edges.
Step 3: Make the Cheese Sauce
In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
Gradually whisk in the milk, stirring constantly to avoid lumps. Cook for 3–5 minutes, or until the mixture thickens slightly.
Reduce the heat to low and stir in the cheddar and mozzarella cheeses, one handful at a time, until melted and smooth.
Season the sauce with garlic powder, onion powder, salt, and pepper to taste. Remove from heat.
Step 4: Combine & Bake
Transfer the roasted cauliflower to a baking dish. Pour the cheese sauce evenly over the florets, ensuring they’re well-coated.
If desired, sprinkle additional shredded cheese or toppings like breadcrumbs or crushed red pepper flakes on top.
Bake in the preheated oven for 10–15 minutes , or until the cheese is bubbly and golden.
Step 5: Serve
Garnish with fresh parsley or red pepper flakes if desired. Serve hot as a side dish or snack.
