2 tablespoons of minced onion (from above)
2 teaspoons of white vinegar
1 tablespoon of yellow mustard
1/2 teaspoon of pepper
Instructions:
1. Line the slow cooker with tin foil, ensuring enough overhang on the sides for easy removal of the meatloaf.
2. In a large bowl, combine glaze ingredients and set aside.
3. Mix together ground beef, rest of onion, stuffing mix, milk, eggs, and salt and pepper. Shape the mixture into a loaf shape and place it in the slow cooker. Top with 1/2 cup of prepared glaze.
4. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
5. Once done, lift meatloaf out with foil overhang and top with 2/3 cup glaze. Put in broiler until glaze gets sticky.
