Dolly Parton’s 5-Ingredient Casserole

Ingredients
1 pound lean ground beef (85% or 90% lean)
3 large russet potatoes, sliced ¼-inch thick
2 sweet onions, sliced ¼-inch thick
1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
2 medium green bell peppers, diced
Salt and pepper, to taste
Instructions
Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or casserole pan.
Step 2: Brown the Ground Beef

In a large skillet over medium heat, cook the ground beef until browned and crumbly, breaking it apart with a wooden spoon as it cooks.
Drain any excess grease from the skillet. Season the beef generously with salt and pepper to taste. Set aside.
Step 3: Layer the Ingredients

Start by layering half of the sliced potatoes on the bottom of the prepared baking dish. Spread them out evenly.
Add half of the sliced onions and half of the diced green bell peppers over the potatoes.
Spoon the cooked ground beef evenly over the vegetables.
Pour the entire can of diced tomatoes (with their juices) over the beef. Use a spoon to spread them out evenly.
Add the remaining potatoes, onions, and bell peppers on top, creating a second layer. Season with additional salt and pepper as desired.
Step 4: Bake
