1. Prep the Zucchini

Slice zucchini into ¼-inch rounds (not too thin, or they’ll get soggy).
2. Coat for Crispiness
In a bowl, toss zucchini slices with olive oil until evenly coated.
In another bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper.
Dip each zucchini round into the breadcrumb mixture, pressing lightly to adhere.
3. Bake to Golden Perfection
Arrange slices in a single layer on the baking sheet.
Bake for 20-25 minutes, flipping halfway, until golden and crispy.
4. Serve & Enjoy!
Sprinkle with fresh parsley and serve with marinara or ranch for dipping.
