Chicken Salad on Croissants

For the Chicken Salad:
2 cups cooked and shredded skinless, boneless chicken breast
1/2 cup non-fat Greek yogurt
1/4 cup light mayonnaise
1 celery stalk, finely chopped
1/4 cup red onion, finely chopped
1/4 cup grapes, halved
1 tablespoon Dijon mustard
Salt and pepper, to taste

For Serving:

4 small whole wheat croissants
Instructions:

Prepare the Chicken Salad:

In a large bowl, combine shredded chicken, non-fat Greek yogurt, light mayonnaise, chopped celery, chopped red onion, halved grapes, Dijon mustard, salt, and pepper. Mix until well combined.
