Chicken Parmesan Bake

Ingredients:
3 boneless, skinless chicken breasts, halved
2 eggs
1 cup panko bread crumbs
1 cup Italian-style bread crumbs (or more panko if preferred)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
24 ounces marinara sauce
1 teaspoon garlic powder
Oil (such as olive oil or vegetable oil) for greasing
Instructions:
1. Preheat oven to 375°F (190°C) and grease a baking dish with oil.
2. Beat 2 eggs in a shallow dish.
3. In another shallow dish, mix 1 cup panko bread crumbs, 1 cup Italian-style bread crumbs, garlic powder, salt, and pepper.
4. Dip 3 halved boneless, skinless chicken breasts in eggs, then coat with the breadcrumb mixture. Optional Tip: For more tender chicken, feel free to tenderize with mallet before doing the coating.
5. Optional: Brown the breaded chicken in a skillet with oil for 2-3 minutes per side.
6. Place the chicken in the greased baking dish.
7. Pour marinara sauce over the chicken, top with shredded mozzarella, and grated Parmesan.
8. Bake for 25-30 minutes or until chicken is cooked.
