Introduction
If you are looking for a dish that combines taste, simplicity and a touch of elegance, the chicken and cheese rolls are the perfect choice. These rolls not only conquer the most demanding palates, but are also extremely versatile, suitable for both informal dinners and special occasions. Ingredients
For 4 people:
4 thin slices of chicken breast
8 slices of cooked ham or bacon
150 g of stringy cheese (such as scamorza, provola or mozzarella)
2 tablespoons of extra virgin olive oil
Salt and pepper to taste
Aromatic herbs (rosemary, thyme or parsley) to taste
Toothpicks to secure the rolls
Instructions
Prepare the chicken
Lay out the chicken breast slices on a cutting board and, if necessary, flatten them with a meat tenderizer to obtain a uniform thickness. Season with a pinch of salt, pepper and some herbs.
Add the filling
Place a slice of cheese on each chicken slice. If you prefer a more intense flavour, you can add a second slice of cheese. Wrap everything with a slice of cooked ham or bacon.
Roll and secure
Gently roll each chicken slice on itself to form a roulade. Use a toothpick to secure the roulade and keep it well closed during cooking.
Cooking
In a pan, heat the extra virgin olive oil over medium heat. Add the roulades and cook for 3-4 minutes per side, until they are golden brown. For even cooking, cover the pan with a lid.
Once golden, transfer them to a preheated oven at 180°C for 10-12 minutes to finish cooking.
Serving and Storage Tips
Serving: Accompany the rolls with a fresh salad, mashed potatoes or grilled vegetables. For an extra kick, serve with a creamy cheese sauce or a white wine reduction.
Storage: Store leftover rolls in an airtight container in the refrigerator for up to 2 days. To reheat, use the oven at 150°C for 10 minutes or a pan with a lid to maintain softness.
