• Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

• Fold in the grated carrots, and raisins or dried fruits, if using.
• Pour the batter into the prepared loaf pan and spread it evenly.
• Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
• Allow the carrot loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
