Buttery Pecan Snowball Cookies

1 cup finely chopped pecans
1 cup powdered sugar for dusting
How to make Buttery Pecan Snowball Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cream the butter and icing sugar in a stand mixer. Set the mixer speed to low, then add the salt, vanilla, flour, and pecans.
Step 3: Form into a one-inch ball, roll in batter, and place balls a few inches apart on parchment-lined baking sheets. Place in the preheated oven and cook for about 11 minutes, being careful not to overcook the biscuits.
Step 4: Once baked, remove the cookies from the oven and let them cool slightly. Meanwhile, place one cup of powdered sugar in a large Ziploc bag or large bowl. Gently coat about 3 or 4 cookies at a time. Pick up the biscuits with a fork, shaking them gently to remove excess icing sugar. Transfer the biscuits to a wire rack and let them cool completely before rolling them in the icing sugar again
