Broccoli, Bacon, and Potato Casserole

Prepare Ingredients:
Peel and dice the potatoes.
Finely chop the onion.
Cut the bacon into small pieces.
Cut the broccoli into florets.
Grate the mozzarella cheese.

Cook Potatoes and Broccoli:
Boil the potatoes in salted water until tender, then drain.
Steam or boil the broccoli in salted water until just tender, then drain.

Cook Bacon and Onion:
Heat some vegetable oil in a pan and cook the bacon until crispy.
Add the chopped onion to the bacon and cook until the onion is translucent.
Mix & Assemble:
In a large bowl, whisk together the eggs and sour cream. Season with salt to taste.
Add the cooked potatoes, broccoli, bacon, and onions to the bowl. Mix well.
Pour the mixture into a greased baking dish.
Sprinkle grated mozzarella cheese on top.

Bake:
Preheat the oven to 180°C (356°F).
Bake the casserole for 30 minutes or until the top is golden and set.
