This recipe is simple, fast, and delivers restaurant-quality jerky right at home. Follow these step-by-step instructions:
Step 1: Prepare the Beef
If using thick slices of beef, slice them thinly against the grain to ensure tenderness. The thinner the slices, the quicker they’ll dry.
Pat the beef slices dry with paper towels to remove excess moisture. This helps achieve a chewy texture.
Step 2: Marinate the Beef
In a mixing bowl, whisk together the soy sauce, Worcestershire sauce, brown sugar, liquid smoke, garlic powder, onion powder, black pepper, and red pepper flakes.
Add the beef slices to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours—or up to overnight—for maximum flavor infusion.
Step 3: Preheat the Air Fryer
Preheat your air fryer to 300°F (150°C). While some air fryers may go higher, 300°F is ideal for consistent drying without burning.
Step 4: Cook the Jerky
Arrange the marinated beef slices in a single layer on the air fryer basket, leaving space between each piece for even airflow. Avoid overcrowding.
Cook for 15-20 minutes, flipping halfway through, until the jerky reaches your desired level of dryness. For softer jerky, cook closer to 15 minutes; for crunchier jerky, aim for 20 minutes.
Step 5: Cool & Store
Once cooked, remove the jerky from the air fryer and let it cool completely. Store in an airtight container at room temperature for up to 1 week, or freeze for longer storage.
