Instructions:
Prepare the Yeast Mixture: In a small bowl, dissolve the yeast in warm water with a teaspoon of honey or maple syrup. Let it sit for about 5-10 minutes, or until it becomes frothy. This step is crucial as it activates the yeast.
Mix the Dry Ingredients: In a large mixing bowl, combine whole wheat flour, rolled oats, and salt. Mix well.
Combine the Ingredients: Add the yeast mixture, remaining honey or syrup, and olive oil to the dry ingredients. Stir until a dough begins to form. It should be slightly sticky but manageable.
Knead the Dough: Turn the dough onto a floured surface and knead for about 10 minutes. If the dough is too sticky, add a little more flour as you go. Kneading helps develop the gluten, which will give your bread a nice texture.
First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about an hour or until it doubles in size.
