Ingredients:
For the Dough:
– 1 cup unsalted butter, softened
– ½ cup powdered sugar
– 1 teaspoon vanilla extract
– 2 ¼ cups all-purpose flour
– ¼ teaspoon salt
For the Filling:
– ½ cup raspberry jam (or any preferred fruit jam)
For Coating:
– 1 cup powdered sugar
Directions:
1. In a mixing bowl, beat the softened butter and powdered sugar until light and creamy.
2. Add the vanilla extract, then gradually mix in the flour and salt until a soft dough forms.
3. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
5. Scoop out small portions of dough and flatten them in your palm. Add about ½ teaspoon of raspberry jam in the center.
