Ingredients
Spices:
1 tsp dried basil
½ tsp dried parsley
½ tsp dried oregano
½ tsp dried thyme
½ tsp mustard powder
¼ tsp black pepper
For the Soup Base:
2 tbsp butter
1 small yellow onion, chopped
½ cup chopped carrots
2 celery stalks, diced
3 garlic cloves, minced
5 cups chicken broth
1 tsp soy sauce
1 tsp hot sauce
1 ¼ lbs bone-in chicken breast
Fresh parsley, chopped (for garnish)
For the Rice:
1 ½ cups chicken broth
¾ cup uncooked long-grain white rice (or 2 ¼ cups cooked rice)
Instructions
1. Prepare the Soup Base
Heat butter in a large pot over medium heat.
Add the chopped onion, carrots, and celery. Sauté for 4 minutes, until softened.
Stir in the minced garlic and cook for 1 minute, until fragrant.
2. Simmer the Soup
Add the spices, soy sauce, hot sauce, chicken, and chicken broth to the pot.
Bring to a gentle simmer (avoid boiling to keep the chicken tender).
