Ingredients:
1 lb Kielbasa sausage, sliced
2 garlic cloves, freshly minced
1 tbsp olive oil
1 small yellow onion, diced
½ cup celery, finely sliced
2 large carrots, peeled and diced
4 cups chicken stock
1½ lbs potatoes, diced
½ cup Parmesan cheese, shredded
2 cups milk (or half-and-half for extra creaminess)
1 tsp dried thyme (optional)
Salt and black pepper, to taste
Optional garnish: Fresh parsley or green onions, chopped
Instructions:
1. Cook the Kielbasa:
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the sliced Kielbasa and cook for 3-4 minutes until browned. Remove from the pot and set aside.
2. Sauté the Vegetables:
In the same pot, add the diced onion, celery, and carrots. Sauté for 5-7 minutes until softened.
